Recently, I have been trying to sign up for different welcome bonuses, but my payments are often done with cryptocurrency. I am trying to figure out how best to make that work best for a new customer sign up bonus, given that many places seem to exclude crypto for the bonus. Are crypto deposits usually excluded from these bonus offers?

It seems pretty hit and miss. Sometimes they do, sometimes they don't. Crypto can be advantageous. On a different note, you should also check to make sure that you are aware of this question, too: "How do I get free bets on Melbet?" That could change things.
